Green Beans with Shallot Vinaigrette
serves 4
Ingredients
- 1 lb green beans, cooked, optionally cooled
- 1 T sherry vinegar
- 1 T red wine vinegar
- 2 T olive oil
- 1 ea shallot, minced
- 1 cl garlic, minced
- 1 t Dijon mustard
- 1/4 C parsley, chopped
Instructions
- Whisk together the oil and both vinegars, then mix in the shallots, garlic, mustard. Season to taste.
- Toss the beans in the dressing, plate, garnish with the parsley and serve.
